Course description

A comprehensive examination of the laws and regulations designed to preserve the safety, wholesomeness, and nutritional quality of the United States food supply.

Objective

To develop an understanding of federal and state laws and regulations that apply to food products, the food industry, and other food handlers; to develop the ability to successfully search the Internet for food laws, regulations, and related topics.

Regular exams: 14% each (x5)  = 70%
Final exam: 10%
Class attendance and participation: 10%
Homework/assignments: 10%

Requirements of Graduate Students

In addition to regular class assignments, graduate students enrolled in FST490 will be required to present precedent legal cases and/or other legal actions pertinent to daily topics. Assignments will be made sufficiently in advance to allow for preparation.
