Oatmeal cookies 8/10
1) coarsely chop and set aside 1/2 cup nuts

2) sift together and set aside:
1.5 c flour
1 tsp baking soda
1 tsp salt
cream together
1 cup shortening
1 tsp vanilla extract

3) add gradually, creaming together until fluffy after each addition:
1 cup sugar
1 cup firmly packed brown sugar

4) add in thirds, beating, thoroughly after each addition:
2 eggs well beaten

5) mixing until well blended after each addition, add dry ingredients in fourths to creamed mixture. blend in the nuts and:
2 cups uncooked rolled oats
1/2 cup semi-sweet chocolate pieces or rasins

form into 4 rolls about 2" in diameter, chilling dough first if necessary. Wrap each roll in waxed paper.
Chill in refrigerator several hours or overnight.
set out cookie sheets

remove rolls from refrigerator as needed. cut into thin slices and place about 1" apart on the cookie sheets
bake at 375 degrees fahrenheit for 10-12 minutes. remove to cooling racks. Makes about 8.5 dozen cookies.

Notes: I never refrigerated these. I also never added chocolate chips or rasins. My dad loves these, but
I marked them down because I don't really like hard cookies and these are a little hard.
