Curry Stir Fry

rice
    In a rice steamer, combine and cook:
3/4 c rice
1 1/2 c water
1 tbsp chicken fat
1 tbsp curry
1 tbsp paprika
a dash of cayenne pepper

veggies
1/2 onion
1 red pepper
    chop and sautee in 1 tbsp chicken fat until soft.  Leave fat in pan.

meat
2 chicken
    chop into 1 1/2" cubes
    sautee in chicken fat (1 more tbsp)

    make a paste out of:
1 tbsp curry
1 tsp paprika
1 tsp lemon extract
1 tbsp vinegar
    add the seasoning past to the meat while cooking.  Rinse the dish with the seasoning out with a few tablespoons of water and dump that in the pot too.  Cook until chicken is cooked through.  Remove the meat, leaving the fat.

sauce
add 1/2 c coconut milk, 1/2 c water, and 1 tbsp flour to the fat in the pan and cook until boiling and thickened to the desired thickness.
