Buttermilk pancakes

1 egg
1 cup buttermilk
2 Tablespoons melted butter
1 cup flour
1 Tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda

Beat egg.  Add remaining ingredients in the order listed, and beat gently just until flour is moist.  Pour batter onto hot griddle.  Turn pancakes once they're full of bubbles but before bubbles break.  Bake 2nd side until golden brown.

To make buckwheat pancakes, substitute a flour mixture that is half white and half buckwheat.
